Tonight we've been baking up a storm! I found a recipe for Chai Spiced Sugar Cookies on Thurday that I've been dying to try ever since. Tonight I finally got around to making them and they are as yummy as I'd hoped!
I will attach the link to the recipe ASAP but my computer is acting up at the moment so tonight I'm very happy we splurged on smartphones for the holidays.
I made a few changes from the original.
1. I replaced 3/4 cup of white sugar with dark brown sugar which resulted in a softer, cakey-er (more cake like?) texture.
2. I didn't have cardamom so I just left it out. The author of the original recipe says she didn't have any either and offers a sub but I thought the cookies tasted just fine without it.
I also made one of my favorite bread recipes. Rosemary bread.
The recipe says to make 4 small loaves but we've started using them as sandwich rolls so my plan tonight was to make 6 smaller loaves/rolls. I was happy mixing away in my Kithenaid when I accidently doubled the recipe. Oops! How does one accidently double a recipe halfway through you ask? Well the recipe calls for 1 cup of water: 1/4 to proof the yeast and the remaining 3/4 as you add the flour etc. Well I used my 2 cup measure for the addition of the 3/4 cup. Only after watching my dough turn to paste did I realize that I'd added 1 3/4 cups. Oops!
Even though this is my favorite bread recipe, I was not at all excited to have double beacause this bread tends to dry out pretty quickly. I quickly went to google to see if I could save part of the dough to bake later. Sure enough I can! So tonight I baked 4 small loaves. I have dough forms of 5 more loaves bagged in the frigde along with dough I am going to attempt to use for pizza crusts. Stay tuned to see how this all turns out. Hopefully we won't get sick of rosemary bread before we run out but if we do I see rosemary croutons in my future. Yum!
