This Easter was our first holiday spent with just the two of us and I gotta say it was nice. Quiet and full of great food! Everything was too yummy to stick around long enough for pictures but here's a few recipes.
Easter Menu:
Deviled Eggs
Cucumbers in cider vinegar
Polish Sausage (boiled then fried with olive oil and onion
"Baked" Potato Salad
5 red potatoes- washed and cubed (this made enough for 4 servings so use about 1 potato per person)
Boil the potatoes until soft but not falling apart. Drain then put in a bowl to chill in the fridge for a while.
Sour Cream
Shredded Cheddar
Chives
Bacon fried until crispy, pat with paper towel to absorb grease then chop
Garlic powder
Salt & Pepper
I eye-balled everything. Just enough sour cream to hold everything together (it was maybe 1/2 cup for the amount I made). Add everything to the bowl with the potatoes and then gently fold it all together.
As you can see it's not really baked, I just use baked potato toppings because I don't like traditional potato salads with eggs and mayo etc.
Blueberry-Sour cream Ice Cream
This was amazing! The color was a beautiful bright purple (much prettier than the picture on the website) and it tasted fantastic! Needless to say it's already all gone. The recipe only makes a small batch (it says 5 servings, we got 3 out of it so I guess their servings were pretty small). I'll definitely be making this again and experimenting with other fruits (raspberry anyone?!).
One last thing to share... I followed instructions from Food Network Magazine when I boiled my eggs for the deviled eggs and they came out perfectly. Who knew the yolk wasn't supposed to turn green on the edges when you boil eggs? I sure didn't! Maybe I'm nuts but I was really excited about how pretty the yolks were, perfect bright golden yellow-- yum!
